What is actually in the bag

A potato crisp is a thin slice of starch cooked in fat. There is nothing in the raw material to build protein out of, which is why an ordinary bag delivers about 2 g.

A protein chip is built the other way round. The base is a protein isolate — whey and milk protein in the dairy versions, pea, lentil, chickpea or soy in the plant versions — bound with a small amount of starch, then baked, puffed or extruded rather than deep-fried. The protein is not added to a crisp. The protein is the crisp.

That production route explains almost everything about the product. It is why they cost three to four times as much as crisps. It is why the texture is drier and lighter, closer to a puff than a slice. And it is why the protein number is real rather than decorative: it is the main ingredient, not a fortification.

The numbers, side by side

On the ratio that sorts this whole category — grams of protein per 100 calories — ordinary crisps score about 1.3 and protein chips score 7 to 13. That is not a marketing difference. It is a category difference, and it is the strongest thing that can be said in the product's favour.

Note the calories, though. They are not lower. A protein chip is not a diet food that happens to contain protein; it is the same calorie load with the composition rearranged. If you eat two bags instead of one because the first felt virtuous, you have gone backwards.

How good is the protein

It depends entirely on the base, and the packet rarely makes a point of it. On the DIAAS scale, dairy proteins score at or above 100 and soy sits in the high band, while pea, lentil, chickpea and rice proteins each score below 75 on their own (Herreman et al., Food Sci Nutr 2020). A single-source pea chip is therefore delivering somewhat less usable protein than its label implies. A dairy-based chip, or a plant blend that pairs pea with rice or soy, is delivering close to it.

Set that against the amount you need. Beyond about 1.6 g per kg of bodyweight per day, extra protein stopped adding to training-induced lean mass gains in a meta-regression of 49 trials (Morton et al., Br J Sports Med 2018), and per sitting the response to whey flattened after roughly 20 g (Witard et al., Am J Clin Nutr 2014). A 15 g bag is a meaningful contribution to a daily target. It is not a supplement, and it does not need to be one.

One practical tell when comparing bags: read the first ingredient. If it is a named protein isolate, the product was designed around protein. If it is a starch, flour or potato, the protein was added afterwards and the ratio will show it.

Where they genuinely earn their place

Three situations, and they are real ones.

As a swap, not an addition. If crisps are already in your week, replacing them with protein chips improves the composition of that snack substantially at roughly the same calories. This is the strongest case for the product and it is a good one.

When the alternative is nothing. Airports, long drives, office drawers, the back half of a working day away from a kitchen. A shelf-stable bag with 15 g of protein beats an empty stomach followed by an oversized dinner.

When you want a snack to actually end. Protein is the most satiating macronutrient, and the effect is big enough to move free-living intake — adults eating a diet with 30% of energy from protein reduced daily intake by around 440 calories without being asked to (Weigle et al., Am J Clin Nutr 2005). A crunchy snack with real protein in it is far more likely to finish the episode than one without.

Where they do not

The honest counterweight is the format itself. In a controlled inpatient trial with menus matched for calories, sugar, fat, fibre and sodium, people eating freely from an ultra-processed menu consumed about 500 more calories a day and gained weight, compared with the same people on a minimally processed menu (Hall et al., Cell Metab 2019). Protein chips are squarely an ultra-processed food. Crunchy, salty, dry and engineered for a fast eating rate — every property that makes the bag pleasant also makes it easy to keep going.

The multi-bag packaging is doing real work here. Buy the sharing bag and the portion control that made the product defensible disappears.

Then there is the price. Protein chips cost three to four times what crisps cost, and roughly five to ten times what the same protein costs from yoghurt, cottage cheese, eggs or tinned fish. You are paying for crunch and for shelf stability, which are genuine features. They are just not nutritional ones.

And some bags carry a meaningful load of sugar alcohols or added fibre for texture. That is usually harmless at one serving and is a common cause of an uncomfortable afternoon at three.

How to read the bag in ten seconds

Four checks, in order of how much they tell you.

Divide protein by calories, multiply by 100. Anything at 10 or above is a genuinely high-protein snack. Between 7 and 10 is the normal range for this category and is fine. Below 5 and you are holding a flavoured starch puff with a claim on the front, which does exist on the same shelf at the same price.

Read the first ingredient. A named protein — milk protein isolate, whey, soy, pea — means the product was built around protein. Potato, rice flour or corn as the first ingredient means protein was sprinkled into a crisp, and the ratio will confirm it.

Check whether the plant protein is blended. Pea alone scores below the quality threshold; pea with rice, or with soy, does not. Blends are a signal the formulator knew what they were doing.

Look at the serving size against the bag size. This is the one that catches people. A bag listing 150 calories per serving and containing two and a half servings is a 375-calorie bag, and nobody has ever eaten two-fifths of a bag of crisps.

Sodium is worth a glance but rarely decides anything — protein chips run comparable to ordinary crisps, which is to say salty. If you are watching sodium for a specific reason you already know to check. If not, the four points above matter more.

What beats them, when you have the choice

If a kitchen is available, several things beat a protein chip on every measure except crunch and convenience.
